Ingredients

Dumplings

  • 1.5 pounds ground pork
  • 1.5 cups finely chopped garlic chives
  • 3 cloves garlic, minced
  • 2 Tbsp minced ginger
  • 3 Tbsp soy sauce
  • 2 tsp sugar
  • 1.5 Tbsp oyster sauce
  • 2 tsp sesame oil
  • 3/4 tsp salt
  • 1 tsp white pepper
  • 35-40 potsticker wrappers

Dipping Sauce

  • 3 Tbsp Chinese black vinegar
  • 2 Tbsp soy sauce
  • 1 tsp sugar
  • 1 Tbsp chili sauce

Instructions

  1. In a large bowl, add pork, chives, garlic, ginger, soy sauce, sugar, oyster sauce, sesame oil, salt and white pepper and mix well to combine. Marinate for 15 mins.
  2. Add 1-2 tsp of filling to one potsticker wrapper and using one finger, wet the edge of half the wrapper with water then fold to the other edge to seal. Make four pleats around the edges and seal tightly to make sure dumplings do not explode when cooking.
  3. In a medium pot, bring water to a boil then add desired quantity of dumplings. Bring to a light boil and cook for about 4-5 mins until filling is cooked through.
  4. For any uncooked dumplings, you can save for later by freezing the dumplings. Just place dumplings on a tray spread out without touching in the freezer, freeze for 1 hour, then transfer to a freezer bag. To cook from frozen, add dumplings to boiling water and cook for about 5-6 mins.
