Ingredients

1 whole fish, such as sea bream, tilapia, or red snapper (~1.5 pounds)

1/4 tsp salt

2 scallions, green parts only and sliced thinly

Knob of ginger (about 2 inches), sliced thinly

2 Tbsp soy sauce

1 tsp dark soy sauce

1 tsp sugar

1 tsp sesame oil

Instructions

  1. Rinse and clean the inside and outside of the fish thoroughly. Transfer fish to a heat-proof, steamer safe dish. Pat the fish dry with paper towels.
  2. Add salt to both sides and the cavity of the fish. Add sliced ginger and scallions on top.
  3. In a small bowl, mix seasoned soy sauce, dark soy sauce, and sesame oil and set aside.
  4. Add water to the bottom of a wok or pot to prepare for steaming. Turn on the heat to bring the water to a medium boil. Add fish to the steamer and steam for 10-13 minutes (depending on the size of the fish) until the flesh is white and cooked through.
  5. While the fish is steaming, combine soy sauce, dark soy sauce, sugar, and sesame oil. Set aside.
  6. Once the fish is cooked, remove from the steamer and drain the liquid. Pour the sauce mixture on top.
