Purple Yam Brazilian Bread

Equipment

Ingredients 

  • 1 large or 2 medium purple yam around 2 cups mashed
  • ¾ cup tapioca starch (flour)
  • 2 tablespoon olive oil
  • 2.5 tablespoon granulated sugar
  • ¼ cup warm milk

Instructions

  • Wash and pat dry the outside of the purple yam. Poke a few holes in the yam with a fork to release steam while cooking. Cook the purple yam in an air fryer at 400F for 35-40 mins. Let the yam cool, peel the skin, scoop the yam into a bowl and mash with a fork.
  • In a large bowl, add mashed yam, tapioca starch (flour), olive oil, sugar, and warm milk. Mix well and knead until a smooth dough (add milk a little at a time as needed to get a firm dough). Divide dough evenly into 12 then roll each into round ball shape.
  • Preheat the oven to 400F. Place the balls on baking sheet lined with a parchment paper. Bake for 25-30 mins.
  • Let cool for a few mins and enjoy immediately.
