Rice Paper Breakfast Danish

A crispy air fried rice paper breakfast danish filled with mozzarella and bacon and topped with a baked egg and chili crisp.

Equipment

Ingredients 

  • 4 tablespoon everything bagel seasoning
  • 3 eggs beaten
  • 8 sheet rice paper round 22cm
  • 2 cups shredded mozzarella cheese
  • 5 slices cooked bacon roughly chopped
  • Neutral oil for brushing
  • 4 eggs for topping
  • Pinch of salt
  • Freshly ground black pepper
  • Chili crisp garnish
  • Micro greens garnish

Instructions

  • Preheat the air fryer to 425F.
  • Sprinkle 1 tablespoon everything bagel seasoning on a flat surface. Dip two sheets of rice paper in the beaten eggs and stack them together.

  • In the center of each stack, add about ½ cup of shredded mozzarella cheese and a small handful of chopped bacon.

  • Fold the corners of the rice paper toward the center to form a square, leaving the center open. Brush the edges with neutral oil, then season the edges with the everything bagel seasoning. Repeat with the remaining ingredients to get 4 total danishes.

  • Add the danishes to the air fryer and cook for 10-12 minutes.
  • With about 4-6 minutes remaining, open the air fryer and crack an egg into the center of each danish, then add a pinch of salt and pepper before continuing to cook. Crack the eggs around the 4 minute mark for runnier yolks or around 5-6 minute mark if you prefer them more cooked.

  • Once the danishes are done, top with chili crisp and micro greens before serving.

Notes

Chef's Tips:
  • Don't overcrowd the air fryer basket and cook in batches as needed. For me, I added about 2 danishes in my air fryer.
  • I prefer runnier egg yolks so I added cracked the egg around the 4 minute remaining mark. However, if you like it more cooked, crack the egg around the 5-6 minute remaining mark.
  • If you can swap the mozzarella cheese with cheddar cheese, gruyere cheese, or any cheese you like.
  • You can also swap the bacon with rotisserie chicken, sliced turkey, or even sliced ham.
