Sauce

Korean-Style Broccoli

Ground Beef

  • 1 tablespoon neutral oil
  • 1 pound ground beef 90% or leaner
  • 3 cloves garlic minced
  • 2 teaspoon minced ginger
  • ½ yellow onion diced
  • 2 green onions chopped
  • Pinch of salt adjust to taste
  • 1 teaspoon sesame seeds for garnish

For Serving

  • Cooked white or brown rice
  • Kimchi
  • Fried Egg

Instructions

  • In a small bowl, combine gochujang, soy sauce, dark soy sauce, brown sugar, rice vinegar, mirin, and sesame oil. Heat in the microwave for 15-20 seconds and mix well until sugar dissolves. Set aside.
    3 Tbsp gochujang, 2 Tbsp soy sauce, 1 Tbsp dark soy sauce, 3 Tbsp brown sugar, 2 tsp rice vinegar, 1 Tbsp mirin, 2 tsp sesame oil
  • Wash your broccoli florets and cut into smaller pieces if needed. Bring a pot of water to a boil, then add broccoli and blanch for 1 minute. Drain and transfer to a bowl of ice cold water to stop the cooking process for a few minutes. Drain again, then toss with sesame oil, salt, and sesame seeds. Set aside.
    6 oz broccoli florets, 2 tsp sesame oil, ¼ tsp salt, 1 tsp sesame seeds
  • In a large skillet, heat the neutral oil over medium high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and mostly cooked through, about 2-3 minutes.

  • Add the minced garlic, ginger, and diced onion, then cook for 2-3 minutes, stirring frequently, until fragrant and the onions soften.

  • Pour the sauce into the skillet and stir to coat the beef evenly. Reduce heat to medium low and simmer for 1-2 minutes until slightly thickened, sticky, and glossy. Add the chopped green onions and salt, then give everything one final stir to combine.

  • Serve the ground beef over warm rice with broccoli, kimchi, and a fried egg. Garnish with sesame seeds and any extra chopped green onions.
