Cook the chicken in an air fryer at 425°F for 11-13 minutes, in batches if necessary. Let it rest for 5 minutes, then slice into thin strips.
Step 2: Cook the Rice Noodles and Prep the Veggies
Cook the rice noodles according to the package instructions, then rinse with cold water, drain, and set aside. Thinly slice the cucumber, rinse the mint leaves, and prepare the garlic chives, keeping everything organized for easy assembly.
Step 3: Assemble the Spring Rolls

- 8 oz. rice noodles
- 8 pieces garlic chives, trimmed slightly to fit the size of a spring roll
- 8-10 sheets rice paper (round 22cm)
Peanut Hoisin Sauce
- ¼ cup creamy peanut butter
- 2 tablespoon hoisin sauce
- 1-2 teaspoon chili garlic sauce or sriracha sauce
- ¼ cup warm water
- Chopped peanuts (optional)
Instructions
- In a large bowl, mix chicken thighs with garlic, lemongrass, fish sauce, light soy sauce, dark soy sauce, brown sugar, and lime juice. Marinate for at least 30 minutes or overnight for maximum flavor. Cook the chicken in an air fryer at 425°F for 11-13 minutes (cook in batches as needed to avoid overcrowding). Let the chicken rest for 5 minutes, then slice it into thin strips.
- While the chicken marinates and cooks, cook the rice noodles according to the package instructions. Quickly rinse with cold water, drain, and set aside. Thinly slice the cucumber and rinse the mint leaves and garlic chives, keeping each ingredient separate for easy assembly.
- To assemble the spring rolls, dip one rice paper sheet in lukewarm water and lay it flat on a clean surface. Add a small handful of microgreens to the lower center of the rice paper, followed by 4-5 cucumber slices, 3-4 mint leaves, and a small handful of rice noodles.
