Remove the rotisserie chicken from the bag, shred the meat, and roughly chop into small cubes. Make sure to save the juices in the bag.

Add the minced garlic, minced ginger, and chopped scallions to a heatproof bowl. Heat the avocado oil in a small pot over medium heat until hot and shimmering (you can stick a wooden chopstick in the oil and if bubbles form around it, the oil is hot). Carefully pour the hot oil over the aromatics to release its flavor. Then add soy sauce and oyster sauce and stir until well combined.

If the reserved chicken juices in the bag have solidified, microwave for about 20 seconds until liquefied. In the rotisserie chicken bag, add the cooked white rice, chopped chicken, scallion oil mixture, chili oil, fried shallots, chopped cucumbers, sesame seeds, and a pinch of salt. Mix well until combined and serve immediately.
