Add the minced garlic, ginger, and chopped scallions to a heatproof bowl.
Heat the avocado oil in a small pot over medium heat until shimmering. Carefully pour the hot oil over the aromatics.
Stir in the soy sauce and oyster sauce until combined.
Mix Everything Together for Chicken Scallion Rice
If the chicken juices have solidified, microwave the bag for about 20 seconds until liquid.
Add the cooked rice, chopped chicken, scallion oil mixture, chili oil, fried shallots, cucumbers, sesame seeds, and a pinch of salt directly into the bag. Mix well and serve immediately.

Yummy! My teens loved it! So did I for what it is! Simple! Easy “girl dinner!” Lol. I would add more scallions/green onions. Like an entire bunch! I added cucumbers as a topping on each bowl served so that I could reheat leftover rice easily. If I had more time, I’d add an egg on top of each bowl!
