How to Make Vietnamese Pork Chops (Air Fryer or Grilled)
Prep the Pork
Use the back of a knife to gently pound and tenderize the pork chops. This helps break down the fibers for extra juiciness.
Cut small slits along the edges of the pork chops to prevent them from curling up when cooking.
Make the Marinade
In a large bowl, mix together the lemongrass, garlic, onion powder, fish sauce, dark soy sauce, soy sauce, oyster sauce, honey, sugar, and lime juice. Add in the pork chops and toss to coat evenly.
Cover and marinate in the fridge for at least 30 minutes, but ideally overnight for the best flavor.
Make the Dipping Sauce
While the pork is marinating, stir together the fish sauce, water, sugar, lime juice, rice vinegar, Thai chili, and garlic. Set aside for serving.
Cook in the Air Fryer
Preheat your air fryer to 425°F. Place pork chops in a single layer in the air fryer basket without overcrowding. Cook for 12–14 minutes, flipping halfway through, until nicely caramelized and cooked through.

Grill Option
If you’re grilling instead, heat your grill to medium-high. Cook the pork chops for about 3–5 minutes per side until they reach an internal temperature of 145°F (63°C).

- 2.5 tablespoon minced lemongrass
- 4 cloves garlic minced
- 2 teaspoon onion powder
- 3 tablespoon fish sauce
- 1 tablespoon dark soy sauce
- 2 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1.5 tablespoon honey
- 1.5 tablespoon granulated sugar
- ½ lime juiced
Vietnamese Dipping Sauce (Nuoc Cham)
- ¼ cup fish sauce
- ⅓ cup water
- 3 tablespoon granulated sugar
- 2 tablespoon lime juice
- 2 teaspoon rice wine vinegar
- 1 red bird’s eye chili Thai chili, minced
- 1 clove garlic minced
Instructions
- Use the blunt side of the knife (back of the knife) to gently pound and tenderize the pork chops. Then, cut small slits on along the edges of the pork chop to prevent curling when cooking
- In a large bowl, add pork chops, lemongrass, garlic, onion powder, fish sauce, dark soy sauce, regular soy sauce, oyster sauce, honey, sugar, and lime juice. Mix well to coat evenly. Cover and marinate for at least 30 mins up to overnight preferred.
- While pork chops are marinating, make the Vietnamese dipping sauce by combining fish sauce, water, sugar, lime juice, rice vinegar, Thai chili, and garlic in a jar. Mix well to combine. Set aside.
- Preheat air fryer to 425F. Add pork chops in a single layer without overcrowding (cook in batches if needed). Air fry for 12-14 minutes depending on thickness.See below notes for alternate cooking methods.
- Plate the pork chops with steamed rice, fresh or pickled veggies on the side, and a fried egg on top. Serve with the dipping sauce and enjoy!

Nuoc cham dipping sauce is traditionally liquid, not thickened so I would leave it as is

I made this. Very good!!! My family loved it. I happened to cook it on the skillet, instead of the air fryer, but watched them closely. Additionally, I heated three or four tablespoons of oil on the stove and poured it over chopped scallions. Very common add on, I hear. Complimented the Very nice sauce in the recipe.
